GROWING UP IN the beautiful Hill Country of Texas, my husband has the best mealtime memories centered around his Mom’s Chicken Curry. This comforting dish always brought warmth to their family gatherings. Grady loved this flavorful curry, relishing the rich spices and tender chicken. After we married, it became a beloved staple in our home. We often chatted about our childhood favorites and dreamed about starting our own family, imagining the joy of sharing this recipe with future generations.

Nearly twelve years later, just when we were about to lose hope of having children, we were absolutely thrilled to welcome our son Cayden in 2015. As Cayden started exploring foods, we couldn’t wait to share our cherished chicken curry with him, a dish that means so much to us. But we hit a little bump in the road—Cayden had sensitivities to dairy and gluten, which both were key ingredients in the original recipe, making it impossible for him to enjoy.

This challenge ignited a culinary adventure that spanned nearly five years of kitchen experiments, as we embraced our inner mad scientists to give Grandma's chicken curry a healthier makeover. We tried countless versions, replacing traditional dairy with coconut milk and using gluten-free alternatives to preserve the original flavor. It required a lot of patience, numerous taste tests, and even a few kitchen mishaps, but our persistence ultimately paid off. And the best part? Later that same year, we joyfully welcomed our second son, Ashton, into our growing curry-loving family.

Our kitchen is now filled with the delightful aroma of a re-imagined family classic, bringing us together around the table to savor a dish that remains delicious yet gentler on the stomach—perfect for our little ones. Watching Cayden and Ashton enjoy each bite fills us with joy, knowing we’ve crafted a healthy and delicious version of this recipe they can eat without worry. Perhaps one day, Cayden and Ashton will share this recipe with their families, adding their own unique touches for future generations to enjoy.
